Crispy fried chicken

ingredients
- 10 Chicken thighs
- 10 tablespoons Plain Flour
- Juice of 2 lemons
- 5 tablespoons Sezchuan Salt & Pepper
- 1 tablespoon Cayenne pepper
- Sunflower oil
- 1 tablespoon fresh garlic powder
method
- Put chicken in a shallow bowl and add a touch of cayenne, the juice of 2 lemons, a touch of garlic powder and 2 tablespoons of Sezchuan salt & pepper, rub all the mix into the skins roughly before covering and leave in the fridge for as long as possible (minimum 4 hours, overnight preferably)
- Put in a shallow bowl: 5 tablespoons plain flour, 3 tablespoons sezchuan salt & pepper, the remaining cayenne pepper and garlic powder and mix well.
- Coat the chicken in the floury mixture.
- Use a lidded wok to heat sunflower oil until frying-hot then add the chicken pieces. Cover and hot fry until golden brown underneath. Turn once (carefully!) and re-cover and fry for a further ten minutes.
- Remove and dab with paper towel/let drip dry for a second and serve.
