Marmite and Wensleydale cheese rosti
by CheeksThis is a brilliant Sunday morning snack, best served with fresh coffee and some Miles Davies. I came up with the recipe one day as i was short of eggs to bind the potatoe, hence the marmite. Enjoy!
ingredients
- 1 large baking potatoe
- 1 teaspoon of marmite
- 1 handful of Wensleydale Cheese
- Salt and Pepper
- 1 small sprig of thyme
method
Dead easy. Grate the potatoe and cheese, and mix in the marmite which acts as a binding agent. Add the chopped thyme and seasoning.
Put a liberal dose of olive oil in a non-stick pan and heat till starting to smoke. Make 2 small rostis (about burger size) in your hand and add to pan.
Allow one side to seal before turning. Repeat for other side of rosti. I like the outside to be crispy and a little blackened!
Serve with mixed leaves.
