250g Cream Cheese
Sugar
Egg yolk (optional)
Butter
White chocolate
Plain (no chocolate) HobNobs
Golden Syrup
method
First,base:
Crush the hobnobs (or other biscuit of your choice) until mostly powder. Add in 75g-ish of melted butter and two tbsps of golden syrup and press firmly - by hand - down into a wide flan dish. It should not reach more than halfway up the sides. Place in fridge to start cooling.
Second, cheeseyness:
Place into your mixing bowl the cream cheese, egg yolk, sugar to taste and (optionally) a splash of vanilla essence and a few drops of lemon juice. Beat well until smooth. Meanwhile, melt 100g of white chocolate and about 50g of butter together. Beat into the smooth cheese mixture.
Remove now-slightly-cool base from fridge, arrange cheese mixture on top, return for fridge for at least an hour, but ideally more.
Eat with a fruit coulis, sorbet, whatever you like.
