Lemon and poppy seed muffins
by JoeA very light muffin with a mild citrus flavour and the light crunch of poppy seeds, they go very well with a good coffee.
We're using baking powder here, once this gets wet, it will start to work. So don't mess about once you add the wet ingredients, get them in the oven as quick as possible for maximum rise.
ingredients
- 280g of plain white flour (i actually used strong white bread flour)
- 200g castor sugar
- 1 tbl baking powder
- 180ml milk
- 60ml sunflower oil
- about 30-40g of melted butter
- 2 eggs
- 1tsp golden syrup
- 1tsp salt
- zest of one lemon
- juice of half a lemon
- 1tsp of vanilla extract
- 2 tbl of poppy seeds
method
Dead easy, combine all the dry ingredients in a large bowl (sifting the flour can help) beat the eggs and place in a mixing jug with the milk, oil and butter.
Make a well in the dry ingredients and add the contents of the jug, stir well until throughly mixed, now add the lemon zest, juice, golden syrup, and vanilla extract, and mix further. Lastly add the poppy seeds but do not over mix after this point as they're quite delicate. Split the mxture evenly between 12 cake cases (or 6 large ones) bake for 20-25 mins at gas 4 - 175c
