Slow Roast Leg Of Lamb
by JoeThis recipe makes super tender lamb and a great gravy to go with it, I usually serve this with mashed potato and green veg.
ingredients
- Half leg of lamb
- 2 carrots
- 1 parsnip
- 5 cloves of garlic
- 2 white onions
- 2 shallots
- some red wine
- thyme, black pepper, salt
method
Unbelievably easy. Chop the veg into large chunks, and throw into a large oven dish with a lid, add the peeled whole garlic and sit the lamb on top.
Score the skin of the lamb and season with thyme, black pepper, and just a little salt, pour over some wine, and dilute it with a little water (the liquid should come about half way up the dish).
Place in the oven at gas 2/150C/300F and leave it there for at least 3 hours, 4 is optimal.
Remove the meat and rest it (it will fall off the bone at this point) use a masher to squish up the other contents of the pan, thicken with corn flour on the hob if needed, sometimes I strain the lumps, sometimes I dont :)
