Masked cauliflower is amazing stuff. It is very versatile too.
The other night I did one with cream cheese instead of butter and milk and then after mashing it, I mixed in diced roasted red bell peppers. So yummy.
Even more recently did one with horseradish, cream cheese, sour cream and chives. Yum!
Yep, mashed cauliflower is a terrific easy veggie side.

Nice.. works as a thick base for a soup as well (add a bit of stilton for a nice tang)... I like the sound of the horseradish addition ^^

Sounds intriguing. I'm not a fan of cream though, so I might try Tori's suggestion of cream cheese. Would yoghurt be totally wrong?

Yogurt will work. The cream acts as a bit of a binder, since it's missing the natural starch you'd get in potatoes. Yogurt or sour cream will work fine.

I got a hand blender for a fiver for dan last christmas from morrisons. I told my friend about this recipe today and they said 'eww!' followed by 'but peanut butter and cheese sounds eww and that's good too.' the maing worry i think is that the consistency will be a bit too runny..

You have to make sure to drain it well, and then only add a bit of cream or it will run. But givt it a good whip after the cream is added. It won't be as thick as potatoes, but it's not a runny mess, either.

I did it! It was good! I wasn't sure what an ass load of garlic was in ounces but I think I did ok.. It's good! I cooked it with kale (as per OJ's directions) and Dan said it went well with salmon.
