uh.. i am a little concerned if the middle of the pork would be well cooked. =P

Ah but it doesn't spoil it at all if it's not cooked (the one pictured wasn't when we first brought it out)
The recipe does address this
"If NOT cooked, don't worry. put the halves back together, wrap tightly in foil and return to a very hot oven for a further 15 mins to finish it off)"
provided you wrap it tightly in foil it doesn't dry out at all
