WOOO-HOOOOT!!! This is a 10/10 by anyone's book. The fillet carries that rich dark flavour - almost earthy - that liver and kidney typically hold, but without being so overpowering... just a hint on top of the classic steak flavour. I think the mushrooms really help bring out the earthiness too and the ham keeps nearly all the juices wrapped up inside. Superbity!!!
